Four Seasons’ summer cocktail menu includes the mojito – with a twist

Yeah, it’s a cocktail. Yes, there’s a sliver of citrus fruit perched decorously on the rim. Yes, there are leaves in it. But aside from possibly a dry Martini, this is the most masculine of all aperitifs – and if it’s man enough for a hard-drinking, bull-fighting war junkie like Ernest Hemingway, who became a fan during his trips to Cuba, then it ought to be a perfectly acceptable companion for your right hand on summer evenings.

The Four Seasons South Terrace is the place to drink it this year. Not only do they have live Cuban music and a menu featuring dishes such as Wagyu beef and quail with apricots cooked on an Aztec grill, there are four mojitos to choose from – although we recommend your testosterone levels are best preserved by sticking to the classic mint, to which assistant lounge manager Paula Pereira has tossed in a dash of basil for added Middle Eastern flavour. Just add two spare hours and some great fishing stories.

Classic Mojito

4cl white rum
3cl fresh lime juice
3 sprigs of mint
2 teaspoons sugar
Soda water

Preparation
-Muddle mint sprigs with sugar and lime juice.
-Add rum.
-Top with soda water.
-Garnish with sprig of mint leaves.
